I have a blog!
Oh my gosh, I have a blog- who woulda thunk it? I'll probably not keep up with it, but I might as well at least give it a shot. I got inspired by reading a bunch of other blogs done by people obsessed with cupcakes. Ok, well it started when I was watching the Pillsbury cook-off on the Food Network. The winner said she had a blog about the different type of cookie she baked EVERY day. And from there I found the links to all these cupcake bloggers. I seriously spent hours looking at the pictures of all these beautiful capcakes they'd made. What a gigantic nerd. Anywho, I'm not going to go into a baking craze or anything, just making a goal of trying some new recipes every now and then when I've got time. Today I tried healthy vegan oatmeal raisin cookies. No eggs, no butter, no sugar...sounds yummy don't it? ;) They get their flavor and moisture from applesauce, molasses, and maple syrup. I sort of made it up as I went by piecing together several recipes I found. The result was pretty decent, considering they were both healthy and vegan AND I'm an idiot and forgot the vanilla. Not fabulous, but I didn't expect them to be. Now that I have my new digital camera (I know, shocking, I finally joined the 21st century and switched over) I'll have to try and add a picture of them. And no, I haven't gone vegan (although I did give up milk and have switched to "Almond Breeze"), I'm just a wannabe. I'll have to try vegan chocolate chip next. I'll post the recipe, although I'm sure no one reading this will try it!
1 1/2 c. quick oats
1. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. applesauce
1/4 c. molasses
1/4 c. maple syrup
1 tsp. vanilla
3/4 c. raisins
Combine wet and dry ingredients separately, then mix together. Bake at 350 degrees for 12 minutes. Makes about 25 cookies.
